American cheese is just an emulsified blend of cheddar and Colby. Kraft American is not real cheese but American cheese is real cheese

Kraft still uses essentially what is American Cheese, they merely label it in such a way that makes it clear it is a processed cheese product.

The thing you're thinking of would be things labelled Pasteurized DAIRY product rather than Pasteurized CHEESE product. The former is the stuff that isn't and doesn't really contain cheese. The latter is decidedly just blended, emulsified cheese.
